I keep this dress­ing stocked in my refrig­er­a­tor at home at all times. It takes no time at all to make, and pairs per­fectly with every­thing from a green salad to fried fish, grilled meats or roasted shrimp. The fun thing about tahini is its abil­ity to absorb liq­uids with­out chang­ing its over­all con­sis­tency. You can add liq­uid to tahini in almost a 1:1 ration with­out chang­ing the con­sis­tency at all, which makes for a super sim­ple dress­ing recipe, no driz­zling, no emul­sion, no stress!

I like to keep the sea­son­ing for this dress­ing sim­ple, but feel free to exper­i­ment with dif­fer­ent spices and fla­vor com­bi­na­tions. Try using cilantro, chives, and other fresh herbs, or spice up the fla­vor with some cayenne, paprika, or all­spice.

Use a medium-inten­sity olive oil. Something with nice pep­per notes and fruiti­ness to play with the rich tahini and acidic lemon juice.

This tahini dress­ing is the per­fect addi­tion to any green salad or as a sauce for roasted meats or seafood. Adjust the sea­son­ing to your taste, or add what­ever fresh herbs or spices you might have handy.

Ingredients

  • 1cuptahini

  • 1/4cuplemon juice

  • 1/2cupolive oil

  • 3/4cupwater

  • 2tspsalt

  • 1tspblack pep­per

  • 1/4 tspcumin

  • 1/2tspgar­lic, finely minced

Directions

  • In a blender or food proces­sor, com­bine all of the ingre­di­ents.
  • Blend until smooth and taste for sea­son­ing.
  • Adjust sea­son­ing as nec­es­sary.
  • Store the dress­ing in the refrig­er­a­tor in an air­tight con­tainer until needed.

Notes

  • If the dress­ing becomes too thick after refrig­er­a­tion, this it with a tsp of water at a time until you reach the desired con­sis­tency.
