I keep this dressing stocked in my refrigerator at home at all times. It takes no time at all to make, and pairs perfectly with everything from a green salad to fried fish, grilled meats or roasted shrimp. The fun thing about tahini is its ability to absorb liquids without changing its overall consistency. You can add liquid to tahini in almost a 1:1 ration without changing the consistency at all, which makes for a super simple dressing recipe, no drizzling, no emulsion, no stress!
I like to keep the seasoning for this dressing simple, but feel free to experiment with different spices and flavor combinations. Try using cilantro, chives, and other fresh herbs, or spice up the flavor with some cayenne, paprika, or allspice.
Use a medium-intensity olive oil. Something with nice pepper notes and fruitiness to play with the rich tahini and acidic lemon juice.
